We’re partnering with Matt Choma, who has spent the better part of his life exploring the intrinsic relationship between food and wine. With a particular interest in the devoted trades of baking, butchery and charcuterie, he has taught charcuterie at Stratford Chef’s School and is the proprietor of Bauer Butcher in Waterloo. As executive chef, and F & B Manager at the exclusive Öviinbyrd Golf Club in Muskoka for over ten years, Matt had the opportunity to curate one of the most exceptional wine lists in the province. He has been the chef/host to over 30 winemaker’s dinners, showcasing the winemaker’s as individuals and presenting food that works in perfect harmony with the wine. Matt’s travels have taken him to many of the greatest wine producing regions of the world but his heart lies particularly in The Rhone Valley and the south of France.
